Creole Kidney Beans & Rice

Ingredients

  • 2 TBSP Olive Oil
  • 1 large yellow onion chopped
  • 1/2 cup of celery
  • 1 bell pepper chopped
  • 3 large cloves of garlic chopped
  • 1/2 TSP Thyme
  • 1/2 TSP Oregano
  • 1/2 TSP Cayenne pepper
  • Several dashes of hot pepper sauce
  • 1 1/2 Cups Vegetable Broth
  • 3/4 cup uncooked Basmati rice
  • 1 can Kidney beans washed and drained
  • 1 Bay Leaf
  • Salt to Taste

Instructions

  1. Heat oil in a large saucepan. Add onions, celery, bell pepper, and garlic and sauté for 2 to 3 minutes. Add remaining ingredients, bring to a boil, reduce heat, cover and simmer until liquid is absorbed for about 20 minutes. Remove Bay leaf before serving.
