Creole Kidney Beans & Rice
Ingredients
- 2 TBSP Olive Oil
- 1 large yellow onion chopped
- 1/2 cup of celery
- 1 bell pepper chopped
- 3 large cloves of garlic chopped
- 1/2 TSP Thyme
- 1/2 TSP Oregano
- 1/2 TSP Cayenne pepper
- Several dashes of hot pepper sauce
- 1 1/2 Cups Vegetable Broth
- 3/4 cup uncooked Basmati rice
- 1 can Kidney beans washed and drained
- 1 Bay Leaf
- Salt to Taste
Instructions
- Heat oil in a large saucepan. Add onions, celery, bell pepper, and garlic and sauté for 2 to 3 minutes. Add remaining ingredients, bring to a boil, reduce heat, cover and simmer until liquid is absorbed for about 20 minutes. Remove Bay leaf before serving.
