Roasted Garlic Hummus
Ingredients
- 1 large can of chickpeas rinsed
- 2 TBSP tahini
- 4 TBSP olive oil
- 1/4 cup warm water
- 1 head of garlic
- 2 TBSP apple cider vinegar or the juice of one lemon
- 1/4 TSP salt (I use himalayan or sea salt)
Instructions
- Preaheat oven to 375 F. Cut off the top of the head of garlic (so that the tops of most of the cloves are exposed), coat with olive oil, and wrap in tin foil. Roast the garlic in the oven for 1 hour. Allow the garlic head to cool, and then squeeze out the cloves into the blender or food processor.
- Place all of the ingredients in a blender or food processor and blend. If it's too thick, add more olive oil.
- Optional: Sprinkle with chopped parsley or paprika before serving.
- Tips: While I'm waiting for the garlic to roast, I place all of the other ingredients into the blender/food processor in the meantime.
