Vegan Greek Quinoa Salad
Ingredients
- 2 TBSP apple cider vinegar
- 2 TBSP red wine vinegar
- 1/4 TSP dried oregano
- 1 clove garlic, crushed
- salt and freshly ground black pepper to taste
- 1 cup quinoa
- 1 pint cherry or grape tomatoes
- 1 jar of pitted kalamata olives
- 2 green onions chopped
- 1 small red onion, halved and thinly sliced
- English cucumber diced
Instructions
- Whisk together vinegars, oregano, garlic, and some salt and pepper. Set aside.
- Cook quinoa per package instructions and let cool.
- Combine veggies, quinoa, and dressing. Flavor is better if you wait an hour before eating it.
