Chickpea Mash Sandwich Filling
Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 TSP Dijon mustard
- 1 TSP apple cider vinegar
- 1 stalk celery, diced
- 2 TBSP red onion, diced
- 1/2 TSP celery seed
- salt & pepper to taste
Instructions
- In a medium bowl, mash the with a potato masher until mostly mashed.
- Add the remaining ingredients.
- Eat on your favorite bread or bun. Optional toppings: lettuce or mixed greens, avocado slices, tomato slices, red onion slices, pickles, and hot peppers.
